No Adj, I’m not constipated, this was just not a weekend for running unfortunately. Man, there really have been way more of those than their should be lately! I wonder why?
However, lack of running aside, what a lovely weekend it was! Saturday started with lunch and TZ trip planning at Jerusalem with Aliesha, continued with a U of MN gymnastics meet with the Spanish community and concluded with birthday partying at Joe’s Garage and The Local with Sami & Co. Ahhh the life! (And isn’t it such a mystery as to why I haven’t been able to get my runs in?!?!)
Sunday was great too. But what day isn’t great when it begins with this–
- 2 eggs
- 2 tbsp water
- a few drops of hot sauce
- Fried black beans and corn
Combine items 1-3 and fry (?) on medium heat
Add in items 4-8 on one side of open-face omelette in proportions that look good to you, fold over and attempt to plate without launching it all over yourself or the floor or the cat…
- 1.5 C all-purpose flour
- 3.5 tsp baking powder
- 1 tsp salt
- 1 T white sugar
- 1.25 C milk
- 1 egg
- 3 T melted butter
- Real maple syrup
Sift together items 1-4 in a large bowl
Make a well in the center and pour in items 5-7
Mix until smoothish
0.25 at least 0.5 C at a time) on a heated, lightly oiled griddle or frying pan over medium heat.
Smother in real maple syrup
Unfortunately this kind of weekend is often the calm before the storm. Actually, maybe the eye of the storm is a more accurate metaphor. Regardless, the last few days haven proven to fall within the bell curve yet again.
Yesterday was spent prepping for what will (knock on wood) hopefully be one of my final experiments as a graduate student! Today was spent trying not to screw up said experiment beyond recognition,
Photoshopping analyzing data and writing…kind of.
Now, after a 16 hour day, I’m home safe and sound without having done anything (I think…fingers are still crossed…this makes typing ticky…) that renders the efforts of the last 2 days unsalvageable. Yeah! 🙂 The majority of my data is actually being quite cooperative and somehow words actually ended up sticking to a page or two…or 4. 🙂
As if all that isn’t sweet enough, during a conversation with Yiannis today, he dropped (totally undirected by me, I swear) both the “D” word and the “C” word in the most beautiful context of “So who do you want to have on your defense committee?” 😀 Holy shit!!! This means it’s actually becoming real! Right?!?!? Talk about the icing on the cake…or the maple syrup on the pancakes!
What are your favorite weekend brunch foods that I shouldn’t be living without?
What was the excitement of the weekend?
